Alton Brown's DIY Turkey Fryer Is the Safest Way to Deep Fry a Bird


Deep fried turkey is wonderful any time of year, whether it's Thanksgiving or the middle of the grilling season. In this video, Alton Brown shows us how to build a "Derrick," or his original turkey fryer—the one you've probably seen on his safe turkey frying episode of Good Eats.


It doesn't take much looking around the internet to find videos of terrible turkey frying fails, some of which lead to catastrophic fires and potential injuries. If you do like the idea of deep frying a turkey (or any other large bird) but don't particularly care to burn down your home in the process, Alton's guide can help. Plus, it's only about three minutes—which is a worthwhile investment considering your safety. In it, he explains how you can DIY your own Fry Derrick with an 8-step ladder, a swivel pulley, an eye hook pulley, a spring link, some braided cotton sash cord, some cable ties, a window shade cleat and fasteners, a screwdriver, and a drill (we're skimming the details—he gets into specific sizes and types in the video.)


From there, it's all about fastening the pulleys and cord to the ladder, and building your lift mechanism so it can be easily controlled without getting too close to the ladder itself. The window cleat shade will wind up excess cable without it trailing ot getting near heat, and the pulleys are used to easily raise and lower the bird in and out of the hot oil without getting close to the pot. Of course, always remember to never overfill your fryer with oil, and to test it out with water first so you know how much displacement room you need for the bird.
