Ground turkey and other lean cuts of ground meat don't break apart easily. Use a potato masher instead of the back of a spoon for even cooking.
Lean meat has less fat and, as a result, may clump together while browning. A potato masher is designed to break up large chunks of food at once, and I've found it works well in this situation. Just press down a few times in the skillet and the masher compresses the meat into small bits that cook quickly and evenly.
