Spring means asparagus is in season, but before you grab a bunch to roast, sautee, or shave into salads or stir-fry, our friends at Chow remind us that storing your asparagus upright in about an inch of water will keep them fresh in the fridge longer than leaving them in the crisper.
The video above tells the tale, but ultimately they walk you through selecting the best bunch of asparagus you can find at the market. Make sure to avoid split, cracked, or already dried-out or woody ends. You're paying for all that dryness and the rest of the stalk will probably be dry and woody as well. Once you get your asparagus home, if you're not going to eat it in a day or two, cut about a half-inch off of the bottom and store the stalks upright in about an inch of water at the bottom of the glass. Cover with a plastic baggie. If the water gets cloudy, change it out, and your asparagus will stay fresh for up to a week. It's an old trick but a good one—one that also applies to fresh herbs and celery too, if you want to try it.
