When you are grilling anything that can melt or drip, a good way to keep it contained and avoid spills is to turn any regular spatula into a tray with some aluminum foil, suggests celebrity chef Alton Brown.
Fold a long (24-inches) piece of heavy-duty aluminum foil in half. Set a large metal griddle spatula in the center and fold the sides up around the spatula, forming a tray. Spritz the spatula-tray with vegetable oil.
Once this is done, load it up with anything you want and place it on the grill. In his video, Brown uses this method to grill cheese in those spatulas, thus making sure they don't spill out and yet are easy to handle when melted. You could use this for anything that's going to be melted or needs some sauce on the grill.
One thing though: make sure it's heavy-duty foil, you don't want it catching fire. Now go watch how Alton Brown makes the perfect grilled grilled cheese sandwich—no, that's not a typo.
